Delicious Southern Tomato Pie
This recipe is perfect for all of the excess Tomato’s we all have from our gardens….delicious!
Serves 6 to 8 people per pie
Ingredients:
4 Tomatoes, sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 ~ 9 inch deep dish pie shell
1 cup grated mozarella
1 cup grated cheddar cheese
1 cup mayonnaise
salt & pepper
Directions:
Preheat the oven to 350 degrees F
Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
Layer the tomato slices, basil, and green onions in the pie shell. Season with salt and pepper. Combine the grated cheeses with the mayonnaise. Spread the mixture over the top of the tomatoes and bake for 30 minutes or until lightly browned and bubbly. (*Tip* I cover the edges of my pie crust with foil for the first 20 minutes so they do not burn or get too brown.)
To serve, cut into slices and serve warm.

I’m from Louisiana and my grandmother used to make this! No Mozzarella in her’s though, yum either way!

This must be a Southern thing (I’m a Midwesterner originally) and I’ve not heard of tomato pie, but love tomatoes, so why not?! I love the fresh basil and all the cheese. I’m just not a mayo person at all though so maybe a yogurt sub? I should try it out.
