Today, these fish are farm raised, as they are incredibly rare in the wild. All legal Golden Osetra caviar is currently produced from sturgeon farms. This helps meet the demand for this type of caviar without overfishing wild populations.

Osetra caviar is frequently compared to Beluga, as their flavor profiles are similar. However, the roe of Beluga sturgeon is much larger than that of Russian sturgeon.
