Today, these fish are farm raised, as they are incredibly rare in the wild. All legal Golden Osetra caviar is currently produced from sturgeon farms. This helps meet the demand for this type of caviar without overfishing wild populations.

Because Beluga sturgeons are so incredibly rare, it is prohibited to fish for as the population is endangered. In fact, the import of all Beluga products from the Caspian Sea have been banned in the United States since 2005. While you may never sample Beluga caviar, Osetra is a worthy replacement.

Osetra caviar is frequently compared to Beluga, as their flavor profiles are similar. However, the roe of Beluga sturgeon is much larger than that of Russian sturgeon.
