Pulled Pork Cuban Sandwich Recipe
▪️2 tbsp EV Olive Oil
▪️1 Tbsp Kosher salt
▪️2 tsp Cumin
▪️2 tsp Dried Oregano
▪️1 tsp Black Pepper
▪️1/4 tsp Crushed Red Pepper
▪️3 to 4 cloves garlic minced
▪️Juice of lime (2 tbsp)
▪️Juice of Orange (2 tbsp)
▪️3 1/2 lb Pork Shoulder
▪️#Schar Artisanal Sandwich Rolls
▪️1 lb Swiss – thick sliced
▪️1 lb Honey Ham – thinly sliced
▪️2 cups dill pickle chips
1️⃣Mix oil, salt, cumin, oregano, black pepper, red pepper, garlic, lime juice, & orange juice in a small bowl. Make slits in the pork with a pairing knife & rub mixture all over the pork. Place pork in slow cooker & pour any remaining marinade on top. Cover & cook on low – about 6 to 8 hours.
2️⃣Remove from the slow cooker & let cool slightly. Shred the pork once cooled a bit using two forks. Set pork aside & keep warm in the cooking liquid.
3️⃣Slice the #ScharGlutenFree Artisinal rolls & smear both sides with mustard. Layer on Swiss, ham, pulled pork, & pickles. Press sandwich in cast iron pan until warmed & melted through!
