My Savvy Review of Holly Clegg’s Eating Well To Fight Arthritis Cookbook
I have been on a health and wellness journey for a few years now and I am always on the hunt for new tasty recipes that are better for you and that still taste really good. That can actually be a real challenge as usually good for you means that the meal is tasteless or does not taste good at all. This is not the case with the delicious recipes in Holly Clegg’s trim&TERRIFIC Eating Well To Fight Arthritis Cookbook. This wonderful cookbook is loaded with 200 delicious and ‘easy to make’ recipes that help to reduce inflammation and ease symptoms. Now… I have recently developed issues with one of my knees and I am sure that it is a sign of the onset of arthritis in my knee. In all honesty my grandmother suffered from arthritis in her hands so it is something that I can learn to deal with, as she did but I will also work to manage my knee through good diet, all natural supplements and exercise. Food is an amazing thing and if you eat the right foods… it can help with so many ailments that people suffer with today which is why I am loving this cookbook and am so excited to share it with everyone that I know. I just made an insanely delicious recipe the other night….. Holly Clegg’s Chicken, Broccoli & Rice Casserole and I am sharing the yummy recipe below. Let me tell you that this recipe is delicious and it is perfect for the entire family as my kids loved it as much as my husband and I did. I mean how can you go wrong with chicken, broccoli and rice in a creamy cheese sauce that is the ultimate in comfort food ~ its delish!
Before I share the recipe lets talk about this fabulous cookbook that everyone can benefit from. Holly Clegg’s Eating Well To Fight Arthritis is hands down the best resource for anyone looking to create easy, delicious and quick recipes that will help to reduce inflammation and also to help clean up their diet which is something that I love and appreciate. The ingredients that Holly uses in her recipes, brings the recipes to life but rest assured that these recipes are easy enough to make on a busy weeknight which is huge as we are all tired after a long day of work and it is easy to want to order takeout or just run through the fast food drive through which defeats the purpose off trying to eat healthy and clean.
The way it works is that Holly has created recipes so that they are full of antioxidants that can help to reduce inflammation which can be the trigger for much of the arthritis pain that anyone experiences. This is not only beneficial for someone suffering from arthritis but also anyone that suffers from chronic pain as the anti-inflammatory benefits of these meals will help with their pain too. Now let’s take a look at my favorite recipe(so far) from the cookbook….
Chicken, Broccoli & Rice Casserole
Makes 8 ~ 1 Cup Servings
Ingredients:
*1/4 cup all purpose flour
2 1/2 cups skim milk
*1 teaspoon minced garlic
*1 teaspoon Dijon mustard
*2 Cups reduced-fat shredded Sharp Cheddar Cheese
*3 Cups White or Brown rice (brown rice preferred)
*3 Cups Cooked Broccoli Florets
*2 Cups chopped or shredded chicken breast
*Salt & Pepper to taste
Directions:
1) PreHeat oven to 400 degrees F. Coat 2 Quart baking dish with nonstick cooking spray.
2) In nonstick pot, whisk together flour and milk. Cook on low heat, stirring constantly until thickened and bubbly. Whisk in garlic and Dijon; add cheese, stirring until melted.
3) Transfer rice, broccoli and chicken into baking dish; stir in cheese sauce, gently mix. Season to taste. Bake 20 – 30 minutes until bubbly and lightly golden on top.

I have heard that some food are better then others but I never really looked in to it. This Chicken, Broccoli & Rice Casserole sounds really good. ((If you had any leftover is this freezable?)) I have every thing to make this. Arthritis is really hard on her person luck me has it in a lot of places. I am going in next week to get cortizone shots again in my knee and both hands. I have had both hips replaced so I really need to look into the right foods.

Yes….. there is such a string correlation to food and your overall health. If you put good in… you fee good. If you put crap in… you feel crappy. It seems simple but with all of the processed foods and the busy lives we live… it is easy to neglect our health.
