Ingredients

*2 pounds chicken tenderloins

*2 tbsp olive oil

*¾ cup smoky flavoured BBQ sauce

*1 can of cooked beans

*1 fire-roasted corn

*½ medium green bell pepper

*1 cornbread mix

*2 cups shredded cheddar cheese

Preheat the oven to 375⁰ F. Spray the baking dish with cooking spray and set it aside. Set the grill pan over medium-high heat. Brush the chicken with olive oil and season it with salt and pepper. Place the chicken in the pan and cook it for 5-8 minutes. Brush each side of the chicken with sauce while the other side is cooking. Transfer the chicken in a bowl and shred it with a fork. Add the beans, corn, bell pepper and remaining BBQ sauce and give it a good stir. In a separate bowl mix the baking mix, milk and egg and 1 cup of cheese. Spread the cornbread mixture evenly over the chicken mixture. Bake it for 30-40 minutes until golden brown. Remove from oven and sprinkle the top with remaining cheese, so it melts on the top.

*1 jar roasted and rinsed bell peppers

*¼ cup slivered almonds

*4 tbsp extra virgin olive oil

*¼ cup Kalamata olives

*¼ cup finely chopped red onion

Place the peppers, almonds, 2 tbsp olive oil, garlic, paprika, cumin and crushed red pepper in a mini food processor. Puree until you get a fairly smooth sauce. Combine the quinoa, olives, red onion and remaining oil in a medium bowl. To serve, divide the quinoa mixture among 4 bowls and top with equal amounts of the chickpeas, cucumber and red pepper sauce. In the end, sprinkle with feta cheese and parsley for a nice finish, and you have a healthy, delicious meal.
