Penne with Vodka Sauce

Penne Al A Vodka

Number of Servings: 4

– Kosher Salt
12 ounces – penne pasta
1 – 28 ounce can whole plum tomatoes
1 tablespoons – unsalted butter
3 – 2 or 3 shallots (depending on size), minced
1 cloves – large clove(garlic) , freshly minced
1/4 teaspoons – red pepper flakes, more or less to taste
1/2 cups – Vodka
2/3 cups – Heavy Cream
1/2 cups – parmesan cheese, freshly grated
– Handful of fresh basil leaves, torn (more to taste)
Directions:

Bring a large pot of salted water to a boil. Add the penne and cook as the label directs. Reserve 1/2 cup to 1 cup of pasta water, then drain pasta. Empty the tomatoes into a bowl and crush with your hands.

Meanwhile, melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic and red pepper flakes and cook, stirring, 30 seconds. Remove from heat and stir in the vodka, tomatoes and salt to taste. Return the skillet to medium heat and simmer, stirring often, until the alcohol cooks off, about 7 minutes. Stir in the heavy cream and cook until the sauce thickens slightly, about 3 minutes. Stir in the parmesan and basil.

Add the pasta to the sauce and toss to combine, adding some of the reserved cooking water to loosen, if needed. Season with salt. Serve topped with more parmesan and basil.

    I’ve never had Vodka sauce before and I’ll admit, I’m a little wary about trying it. But seeing how delicious this recipe looks makes me want to give it a try. The combination of wonderful Italian flavors–Tomatoes, Parmesan, Basil, Red Pepper, and Garlic all sound heavenly. Thanks for sharing!

    Looks delicious! Have never attempted to make vodka sauce at home, usually just buy it in the jar. This looks way better!

    Penne with Vodka Sauce is one of my husbands favorite meals. I always buy store brand of sauce for this. I would like to try this recipe though, it looks fantastic.

      I too buy store brands in pinch BUT if your husband is a big fan of this dish… he will be blown away by this homemade sauce recipe. I live on Long Island but was in Myrtle Beach for a long so it was very hard to find a real home meade Vodka Sauce there as compared to here on Long Island where you have so many delicious Italian eateries….they make the sauce daily homemade….. well….. long story short there is NOTHING like this homemade recipe! Make it for him and you will be in love with it yourself! 🙂 Thanks for the lovely comment.
