This is the perfect meal to make when you have leftover rice and it is also a great way to make use of any leftovers you may have too. I always make lots of veggies for diner to go with ut meal so when I have them leftover they will be the perfect veggies to add to this fried rice. The sky is the limit here and you can really whip whatever you like into this dish and it will be delicious. The one I am making incorporates crispy bacon, thinly sliced green onions, low-sodium soy sauce, & eggs. The end result is a dish of delicious fried rice that will be the perfect way to start your day.

This is a delicious recipe that my husband is going to love as he loves rice pudding. Arroz con Leche is a creamy homemade dessert made using rice and milk and is also known as Mexican Rice Pudding. There are tons of variations for this recipe online and while it is most often enjoyed as a yummy dessert, in some countries in Europe this is a delicious porridge-like comforting breakfast. This is the simplest recipe as it is made with staple pantry items like rice, milk, water, cinnamon sticks, and sugar and can be adjusted to suit your tastes plus it is easy to make. Red Rice with Sausage
This is a recipe I have not made for myself but my mom made this all of the time when I was a kid. I just love this recipe and will be recreating it for my own family this week. It is comforting and hearty and the sausage of the perfect pairing with the yummy red rice. I grew up outside of Charleston, SC and this is an iconic Charleston dish that I truly love. You can eat this on its own or serve with pork chops or any other protein you choose. I say Pork Chops as that is what my mom would make with red rice and she would sometimes bake them and other times she would fry them and fried pork chops are so good! It is a mix of rice, bacon, yellow onion, bell pepper, smoked sausage and some spices…. and the end result is a delicious bowl of goodness.
Classic Stuffed Peppers
Another recipe that is made with rice and that I love. Now this is another recipe from my childhood that I am going to recreate and my husband absolutely loves stuffed peppers so its perfect. The peppers act as your bowl…. and you can use leftover rice or freshly made rice for this recipe. You simply stuff a mixture of meat, rice and cheese into the peppers and bake them in the oven. You can really get creative here and I am going to use ground beef in mine but you can use Italian Sausage or any ground protein… like pork, turkey or chicken to suit your tastes.
This is a dish that I have never had and that I have been wanting too and it is perfect as it too uses lots of rice. Paella is a classic Spanish rice dish made with rice, saffron, vegetables, chicken, and seafood that is all cooked and served in one pan. You can change it up as there are variations of the recipe… Chicken Paella, Seafood Paella, or mixed Paella which is a combination of seafood, meats and veggies. This is perfection and love love love that it is a one dish meal which makes it perfect for me.
Chicken Spinach Artichoke Rice Casserole
There is nothing better than a delicious casserole any night of the week. This Chicken Spinach Artichoke Rice Casserole is no exception and my husband will love this dish due to the fact it utilizes artichokes. This is a comforting chicken casserole that truly needs to be in your winter dinner rotation. The base of the dish is rice and add in chicken, spinach, artichoke, cream cheese, mozzarella, parmesan and spices. So delicious and comforting and it all bakes in one casserole dish for the ultimate on convenience too.
Cheesy Chicken Broccoli Bake
This is a delicious meal that you can make on a busy weeknight. It cooks up in one pan and is the ultimate in yummy goodness. You really will not be able to get enough of this delicious dish. It is a cheesy rice bake with chicken, broccoli and cheddar and it is the ultimate flavor combination baked in one dish which makes it perfect for a busy weeknight. The recipe starts with rice and a bit of onion, garlic, cubed chicken, low-sodium chicken broth, broccoli, cheddar and bread crumbs for the topping.
