It is no secret to anyone that knows me that I have been on a health and wellness journey for about 3 years now after a serious health scare. It is also no secret that because of that health scare, I have changed the way that my family and I eat. I no longer purchase processed foods that are loaded with so much of the bad and have turned to eating more organic fruits and vegetables as well as leaner cuts of meat. I cook everything for my family now as the meals are fresher, healthier and extra delicious. Gone are the days of eating out too because… have you taken a look at the nutritional values of the foods that many of these well known restaurants serve you? Yikes!?! it is pretty scary and the reason I jumped at the chance to give Holly Clegg’s trim&TERRIFIC KITCHEN 101: Secrets to Cooking Confidence Cookbook a try. This wonderful cookbook is packed full of the cooking basics plus 150 easy healthy recipes that will help me to up my flavor factor when creating delicious, healthy meals for my family.
Let me start off by telling you a bit about Holly Clegg and why I jumped at the chance to check out the trim&TERRIFIC KITCHEN 101 Cookbook. Holly Clegg has sold over 1.5 million cookbooks and she has become a culinary expert on easy, healthy and practical recipes which is right up my alley. Her Best-Selling trim&TERRIFIC Cookbook series are nationally recognized, including the more targeted health focused Eating Well cookbooks such as…. Eating Well Through Cancer, Alimentándose bien durante el cáncer (Spanish edition), Eating Well to Fight arthritis, Diabetic Cooking with the ADA and Guy’s Guide To Eating Well. Clegg attended the Cordon Bleu Cooking School and has made multiple appearances on Fox & Friends, NBC Weekend Today, QVC, The 700 Club, USA Today, Web MD, and The Huffington Post. She has also consulted for Walmart, Teflon, The Coca-Cola Company, and hospitals throughout the country. She has an amazing blog and social channels that I am following as I am obsessed with everything that she does and will be looking to create new delicious dishes for my family using her fabulous recipes.
Now let’s take a look at this book and why it is the perfect book to help get you started on your journey to cooking cleaner and healthier for you and your family. KITCHEN 101 is the perfect cookbook that will inspire and guide you to a healthier cooking journey and what I love most is that these recipes are created to be simple by using everyday ingredients that you probably already have on hand in your refrigerator and/or pantry. This easy healthy cookbook is perfect for preparing healthy quick meals for your family and most recipes are 10 ingredients or less and come with easy-to follow directions with gorgeous photos of each recipe too. There are different sections throughout like Crock Pot Cooking, Menus Chapter, Fix It Fast and Rotisserie Chicken chapters that provide you easy mouthwatering nutritious recipes for even the busiest of families. Seriously… this book is the perfect first cookbook and/or healthy college cookbook too for your recent Grads or anyone new to cooking.

Smothered Chicken
Effortless flavorsome chicken in a rich brown gravy served over rice is the ultimate comfort food. When done, leave on simmer until ready to serve, you can’t overcook — just gets more tender.
Makes 6 servings
INGREDIENTS:
1 onion, chopped
1 teaspoon minced garlic
1/2 cup water
2 pounds boneless skinless chicken breasts
1/4 cup all-purpose flour dissolved in 1/2 cup water
1 cup fat-free chicken broth
1 bunch green onions, chopped
2 tablespoons chopped parsley
Salt and pepper to taste
DIRECTIONS:
1) In large nonstick skillet coated with nonstick cooking spray, sauté onion and garlic until tender and browned, 5–7 minutes.
2) Add 1/2 cup water and continue cooking 5 minutes. Add chicken. Bring to boil, reduce heat, cover and cook 20-30 minutes until chicken is tender.
3) In small cup mix together flour and water and add to skillet, stirring until smooth and thickens. Gradually add broth, cooking until chicken is done and gravy is bubbling, another 15-20 minutes.
4) Stir in green onions, parsley, and season to taste.

Terrific Tip: If you’re only using a small amount of parsley, dried parsley is fine.
Simple Southwestern Casserole
Zesty, meaty casserole with a biscuit surprise — you will be amazed at how extraordinarily tasty this simple combination is. This recipe has become so popular in my family.
Makes 9 (1-cup) servings
INGREDIENTS:
1 pound ground sirloin
1 onion, chopped
1 (10-ounce) can enchilada sauce
1 (8-ounce) can tomato sauce
1 (15-ounce) can black beans, rinsed and drained
1 cup frozen corn
1 (8-10 count) can reduced-fat refrigerator biscuits
1 cup shredded reduced-fat Mexican blend cheese
1/3 cup chopped green onions
DIRECTIONS:
1) Preheat oven 350°F. Coat 13x9x2-inch baking dish with nonstick cooking spray.
2) In large nonstick skillet, cook meat and onion until meat is done; drain excess fat. Add enchilada sauce, tomato sauce, black beans and corn, stirring well. Cut biscuits into fourths and stir into meat mixture.
3) Transfer to prepared pan. Bake 25 minutes. Remove from oven, sprinkle with cheese and green onions. Return to oven and bake 5-7 minutes more or until cheese is melted.

Terrific Tip: Use kitchen scissors to make cutting biscuits easy. If you have trouble finding enchilada sauce, you can substitute salsa.
Beef Brisket/Beef Sliders
Four simple ingredients plus meat combine for a melt-in-your- mouth brisket meal that basically cooks itself!
Serves 16-20 (4-5 ounce) servings
INGREDIENTS:
1 (5-6 pound) brisket
Garlic Powder
2/3 cup light brown sugar
1 cup water
1 envelope dry onion soup mix
1 cup ketchup
DIRECTIONS:
1) Season brisket heavily with garlic powder. In 3 1/2-6-quart slow cooker, insert plastic liner if desired, and mix together remaining ingredients. Add brisket and turn to coat with sauce. Cook on LOW 6-8 hours or until tender.
For Beef Sliders: Fill miniature rolls with brisket, Brie, and red onion — easy and fantastic!

Terrific Tip: You can always toss in some potatoes, sweet potatoes and carrots, if desired.
