4 Delicious Mushroom Recipes That Will Leave You Craving for More

Mushrooms are among the most delicious natural foods out there. Their rich, earthy taste is complemented perfectly by their meaty textures, not to mention the fact that they are packed with heaps of vitamins and minerals that will help you to stay feeling great.

With so many great mushroom recipes around in cookbooks and on the internet, mushroom lovers really are spoiled for choice. Here is a selection of our favourite fungi-based recipes that you can try at home without having too many skills in the kitchen.

1)Porcini Risotto

You would be challenged to find many dishes as classically Italian as this full-bodied porcini risotto made in the traditional way with mushrooms, Parmesan cheese, butter and a liberal splash of white wine. After soaking the porcini mushrooms, boil up a broth of beef stock and garlic. Add the mushrooms and some fried shallots. Throw in some Arborio rice and cook until the risotto is rich, creamy and fragrant. Add seasoning and more wine to taste.

2)Chicken with Rich Mushroom Sauce 

Looking for a way to add some zest to your roast chicken? Well, you have come to the right place! This creamy mushroom sauce is made by frying garlic and mushrooms in butter for a few minutes before whisking in flour, thyme, basil and flakes of crushed red pepper until the sauce thickens. After, bake some chicken thighs and season them to taste before drenching them in the mushroom sauce and serving them up. I had this with South African poultry and it was delicious! Getting tasty chicken is a big part of perfecting this recipe.

3)Garlic Mushroom Quinoa

If you are on a health binge, this garlic mushroom quinoa dish ticks all the boxes and makes a perfectly refreshing meal all year-round. All you have to do to make it is fry some mushrooms, thyme, garlic in a pan and then season to taste. At the same time, boil some quinoa until it is soft. When you have finished, mix the mushroom mix with the quinoa and stir.  

4)White Mushroom Pizza

This rustic white mushroom pizza makes the perfect meal for the whole family. The first step is to butter-fry some mushrooms in a skillet with oregano and thyme. Preheat the oven to 420 degrees and roll out a thin dough base. Cover the base with some tomato sauce, add the fried mushrooms and then throw on some mozzarella and ricotta. Bake for around 20 mins and you are good to go!

    I love risotto, so the Porcini Risotto calls my name. But, that quinoa with mushrooms and garlic kind of intrigues me, too. I’ve never tried quinoa like that.
