Peel carrots and cut the carrots into 1 and a half inch to 2 inch pieces, depending on the thickness of the carrots. Cut on the diagonal for a nice look.
Put carrots in a mixing bowl and add the olive oil, honey, minced garlic, and salt and pepper. Toss everything together and then dump onto a lined baking sheets and spread out evenly.
Place the pan in the oven to roast for about 40 to 45 minutes. I keep an eye out at the end to get my desired doneness.
Remove the baking sheet from the oven and just use a spatula tp toss them all around the pan again to pick up everthing on the pan. It's all delicious flavor!
Plate carrots and sprinkle with fresh chopped parsley if desired as a garnish. Enjoy!
