I totally love to cook and am always trying new cuisines and experimenting with new recipes. I recently had the chance to try Risotto, which I cannot believe I have never had until now as it is so yummy and satisfying. I enjoyed the Risotto so much that I have decided to do my research to find out how to make the best batches of Risotto for me and my own family. Risotto is a creamy Italian dish, made using Arborio rice and that tastes a lot like the rice version of a yummy mac and cheese. That is everything to me and the reason I loved this recipe as I am a southern girl that loves southern mac and cheese so naturally… Risotto was a huge hit for me.
The process of making Risotto is pretty simple once you get used to it. All Risottos come together with Arborio rice and whatever type of stock your recipe calls for. You put the risotto into a pan with a bit of melted butter and let the rice absorb it. Once it has you start adding a ladleful of stock to the pan stirring until the Risotto absorbs the broth. You then add another ladleful to the pan and do this again and again. This gradual process cooks the rice while coaxing out the starch to form a creamy sauce… without the use of cream! This is like the recipe I tried recently and I just love it. It is simple cheesy creamy goodness and I cannot recommend it enough. It is made with Arborio rice, chicken broth, yellow onion, garlic & parmesan cheese plus a few other ingredients to suit your tastes and cooked until creamy and delicious. This is a fabulous side dish or a dish all its own.
2. Portobello Risotto with Mascarpone
This is a yummy recipe and one that I will be making as my husband loves Portobello mushrooms. This dish is rich and hearty blend of Portobello mushrooms that add a hearty and beefy flavor to this creamy and delicious classic. When serving… you simply top with soft, buttery mascarpone cheese which makes it extra delicious.
3. Bacon, Cheddar and Chicken Risotto
My kids will love this delicious Risotto recipe. It is provides an American twist to this Italian classic and I know this will be absolutely delicious. This recipe is undeniably creamy and decadent with risotto that is mixed with flecks of smoked bacon, plenty of aged cheddar that blends and melts into the risotto and then topped with chunks of seasoned grilled chicken. It is a masterpiece of a meal that my family will surely devour and it is first on my list to make.
4. Shrimp Risotto
This will be a yummy recipe to make and this is one I will be making soon. As you know…. Risotto is made with various broths, cooked into Arborio rice to create a creamy delicious batch of risotto. For this one… you need Shrimp stock to make this delicious batch of Risotto using the shrimp shells from the shrimp you will be using in the recipe. Once the broth is made you will use it to mix into the Arborio rice, one ladle at a time and letting the broth absorb fully into the rice. This will create a delicious and creamy risotto that you will top with delicious shrimp. and for me… some Parmesan cheese.

This is a delicious risotto recipe that looks so fresh and yummy. It is a blend of spinach, leeks, fennel, favas and chanterelles added to this batch of Risotto that lends a bright pop of flavor to this comforting dish. It is a really beautiful dish too and perfect for serving when company is over as t is so pretty.

This is another recipe that I cannot wait to make for myself and my family. My mom is from Louisiana and Jambalaya is a meal that she always made for me growing up. I am loving this twist on Risotto being made into a Jambalaya dish and all while cooking up in the crockpot. Simply and totally delicious and this is perfect for the winter months using winter root veggies. This makes the perfect weeknight version of Risotto due to it being easy to make.

This is a fabulous recipe to make and one that I will make when my sister comes into town. This is also the perfect recipe to serve for special occasions. You make a batch of Parmesan Risotto… or whatever flavor you love best…. and while that is cooking on the stove top, you can save time by roasting the asparagus and prosciutto in the oven. Once the rice is done…. you can stir the roasted asparagus and prosciutto in and serve.
10. Seafood Risotto
I added this to the list as my husband loves seafood and especially clams and mussels. This Risotto is made using a veggie or fish stock and you can add in a feast of tiny clams, plump mussels, sweet sea scallops, and calamari. It is super yummy, creamy and comforting goodness.
