A delicious and easy one pan dinner! It's a mix of delicious Coleman Natural Kielbasa, broccoli, sweet potatoes, potatoes, red onions and more all roasted together in a yummy honey garlic sauce that is everything!
1Sweet Potato ~ diced into cubes1 large or 2 small sweet potatoes
5Baby Red Potatoesdiced into cubes
5 Baby Yukon Gold Potatoesdiced into cubes
2Heads of Broccolichopped
1Red OnionQuartered & Quatered again into small slices
1tablespoonOlive Oil
1 to 2teaspoonKosher Salt
Pinchfreshly ground black pepper
Garlic Honey Sauce Ingredients
2tablespoonsOlive Oil
2tablespoonsUnsalted ButterMelted
2tablespoons Honey
1 1/2tablespoonsBrown Sugar
4Cloved Garlicminced
1/2 teaspoonDried Oregano
1/2 teaspoonDried Basil
1tablespoonDijon Mustard
1/2teaspoonKosher Salt
Instructions
Preheat your oven to 400 degrees F.
Mix together the Garlic Honey sauce first. Use a whisk to make sure sauce is mixed perfectly and then reserve and set aside 2 tablespoons to use at the end when serving.
Add sweet potatoes, baby red potatoes, baby Yukon Gold potatoes, and red onion to 2 sheet pans. Drizzle with Olive Oil and sprinkle with Kosher Salt & Pepper.... mix well using your hands or tongs and spread it all around. (I use 2 sheet pans so that I am able to spread the veggies out because they need room to properly roast. If they are packed too tight on the sheet pan... the veggies will steam rather than roast and what you want is the yummy goodness of the roasted potatoes and onions here.)
Next...add the sliced Kielbasa to the pan and brush with the garlic honey sauce mixture... making sure to reserve the 2 tablespoons of sauce needed for serving.
Bake the 2 sheets pans at 400 degrees for 20 minutes.
While veggies and kielbasa are roasting, drizzle olive oil over the broccoli in a bowl and then sprinkle with salt and pepper. Mix well with your hands or tongs and set aside until sheet pans have finished roasting for 20 minutes.
Add Broccoli to the 2 sheet pans... spreading the broccoli out evenly between the 2 pans. Continue to bake for another 5 to 10 minutes, or until the broccoli is cooked nicely and has a nice green color.
Remove the sheet pans from the oven and drizzle the remaining sauce over everything! Serve and eat as is or add to some couscous by piling the roasted goodness right on top! Enjoy!

You can serve this meal as is, or I like to serve on a fresh batch of Couscous. It is delicious and hearty and the whole family will devour it! Enjoy!
