Spice Up Any Recipe With Spices, Dips & Mixes From Pandemic Polly Peppers PLUS A Recipe For Spicy Baked Crack Chicken Breasts

It is no secret to anyone that knows me that I love to cook and to recreate delicious recipes from family and friends and also recipes that I find on Pinterest. It all started with me loving my grandmothers food….every time that we would visit her outside of Atlanta when I was a young kid… I would envision delicious breakfasts, lunches and dinners as she was hands down the most amazing southern cook and made absolutely everything from scratch. This is for sure the inspiration for my love of cooking and the reason I jumped at the chance to recreate one of my favorite Pinterest recipes for Baked Crack Chicken. I substituted the traditional ranch seasoning that I use in this recipe with Pandemic Polly Peppers amazingly delicious Spicy Buttermilk Ranch Dip Mix and am calling it Spicy Baked Crack Chicken Breasts. This is perfection for those that love a bit of heat in their dishes…and my son and I absolutely loved it!

Pandemic Polly Peppers started due to the pandemic that hit this year. After the pandemic hit they were laid off and started thinking of ways to make extra income to earn a living.  The husband and wife duo had been growing peppers strictly for fun for about 5 years. He loves gardening and she loves to cook and make products so hence…. Pandemic Polly Peppers was started. They literally grow the peppers on their small farm in Colorado and I have to tell you that everything they make with these peppers that I have tried so far are amazingly delicious and provide lots of flavor and heat to any dish. I loved their story and am honored to be a part of their journey and cannot wait to share the first of many recipes I will make using Pandemic Polly Peppers products.

I received a few mixes to try. I picked up Pandemic Polly Peppers SPICY Buttermilk Ranch Dip (used in my Spicy Baked Crack Chicken Breast recipe featured below), SPICY Smoky Onion Dip Mix, and their SPICY Sicilian Herb Oil Bread Dip Mix. I have to say that it was hard to choose as there are so many delicious products to choose from on the Pandemic Polly Peppers online shop and I cannot wait to try them all. I also have to let you know that they make these for you as you get to choose the type of pepper your mixes are infused with. You can choose from Trinidad Scorpion Peppers, Carolina Reaper Peppers and Ghost Bhut Jolokia Peppers. I chose to have all of my mixes infused with Scorpion Pepper as they are the lowest of the three choices on the heat scale.

SPICY Buttermilk Ranch Dip

The SPICY Buttermilk Ranch Dip Mix is made with real sweet buttermilk powder and fresh tasting herbs that create the perfect and most delicious classic cool ranch that pairs perfectly with veggies, salads and also perfect for using in recipes. Make sure you check out my recipe below for SPICY Baked Crack Chicken Breasts which is made using this wonderful mix.

Each bag contains 19 grams of Buttermilk Ranch Dip Mix. Yields 2 cups of dip or dressing. Each dip is infused with enough dehydrated pepper to make your taste buds sing. Remember that you get to choose what pepper you would like infused in your mix which is pretty cool and right now the choices are Ghost, Carolina Reaper and Scorpion. NO added MSG or sugar. Gluten free & vegetarian.

Directions: Stir together dip mix, 1cup of mayonnaise and 1 cup of sour cream.  For a lighter dip you can use yogurt instead of either mayo or sour cream. For salad dressing stir together dip mix, 1/2 cup buttermilk dressing and 1.5 cups of mayo,  Chill 4 hours to let flavors and heat to fully infuse.

SPICY Smoky Onion Dip Mix

This dip is a rich, creamy onion dip with a hint of hickory smoke and black pepper. This is perfection for burgers, sandwiches and baked potatoes and you can mix into ground beef and Italian sausage for an awesome meatloaf ro even for onion infused delicious sliders or burgers.

Each bag contains 25 grams of Smoky Onion Dip Mix. Yields 2 cups of dip or dressing. Each dip is infused with enough dehydrated pepper to make your taste buds sing. Remember that you get to choose what pepper you would like infused in your mix which is pretty cool and right now the choices are Ghost, Carolina Reaper and Scorpion. NO added MSG or sugar. Gluten free & vegetarian/vegan.

SPICY Sicilian Herb Oil Bread Dip Mix

This is a well balanced Italian herb mix that is amazingly delicious for dipping fresh Italian bread into and  even for using as a delicious dressing on an Italian hoagie. My husband is loving this and he is Italian so that speaks volumes. You can use any oil you like when using this dip mix…. olive oil, avocado oil and avian coconut oil would work if that is your preference. My favorite way to use it is with Olive Oil and a little balsamic on the oil before dipping!!

Each bag contains 16 grams of Sicilian Herb Bread Dipping Mix. You will get three servings from this packet. Each serving yields about 9 oz oil infused dip. Each dip is infused with enough dehydrated pepper to make your taste buds sing. Remember that you get to choose what pepper you would like infused in your mix which is pretty cool and right now the choices are Ghost, Carolina Reaper and Scorpion. No MSG, Gluten free & vegan.

Directions: Take 1 tablespoon of mix, mix with 1 tablespoon of warm water (helps the mix blend easier) and 8oz olive oil. Shake in a mason jar and let sit for 4 hours to let flavors and heat fully infuse.

SPICY Baked Crack Chicken Breasts
Chicken is creamy and cheesy on the outside, tender and juicy on the inside! Soooo good , seriously addictive and loaded with delicious flavors like crisp bacon and loads of melty cheese. This one is kicked up a notch and nice and SPICY using Pandemic Polly Peppers Buttermilk Ranch Dip Mix.

Instructions
  1. Preheat oven to 400 degrees
  2. Line a big baking sheet with parchment paper or grease a large casserole dish.
  3. Using a large skillet over medium-high heat... add diced bacon and cook until crispy.
  4. Remove the bacon from the skillet and set aside. Leave the bacon fat in the pan for now. DON'T discard it.
  5. Return the skillet to the heat and add a bit of vegetable oil to the remaining bacon fat.
  6. Pound out your chicken breasts to a 1/4 inch thickness and then season each side with salt, pepper, garlic powder and paprika.
  7. Add the chicken breasts to the hot oil. You will have to do this in batches unless you have a big pan especially because you have pounded them flat. Cook 2 to 3 minutes until golden brown.
  8. Flip the chicken breasts over and continue to cook 2 to 3 more minutes until golden brown.
  9. Remove the chicken breasts from the skillet and arrange on baking sheet. Set aside.
  10. In a medium bowl, combine the cream cheese and the 2 tablespoons of Pandemic Pool Peppers Buttermilk Ranch Dip Mix. Mix well and taste to make sure it is spicy enough or season a bit more if needed.
  11. Top each chicken breast with 2 Tablespoons of the cream cheese mixture. Spread to coat the surface of each chicken breast.
  12. After topping all chicken breasts with cream cheese mixture, take half of the bacon and sprinkle all chicken breasts withal of the diced bacon. (Reserve the remaining bacon for after baking)
  13. On top of the bacon and cream cheese add some scallions to each chicken breast.
  14. Now top each chicken breast with the shredded cheese.
  15. Bake uncovered for 20 to 25 minutes, or until chicken is cooked through and cheese is melted and lightly browned.
  16. Remove from oven.
  17. Garnish with remaining bacon, fresh parsley and scallions and serve!
Recipe Notes

I like to make a large batch so that I have leftovers as it is delicious reheated too. You can also place the cooked crack chicken breasts in a freezer bag and freeze for up to 3 months too.
