  1. For Batter:
  2. In a large mixing bowl, mix flour, sugar, baking soda, baking powder and salt.
  3. In separate large bowl, whisk eggs, ricotta cheese, buttermilk, whole milk and butter and lemon juice together.
  4. Mix in lemon zest to the wet mixture.
  5. Pour wet mixture into the dry mixture and stir until smooth.
  6. Cook according to waffle iron instructions.
  7. For mascarpone mixture:
  8. In a small bowl, blend lemon curd into mascarpone.
  9. Place cooked waffle on plate and top with mascarpone and blueberries.
  10. Add powdered sugar if desired.
