Cheesey Potato Casserole
Delicious casserole layered with mashed potatoes, cheese, sautéed peppers and onions, sour cream, sliced cooked potatoes and more cheese. Top off with crumbled bacon. Perfect for those leftover mashed potatoes you have on hand.

  1. Preheat Oven To 350 degrees & Gather all of your Ingredients.
  2. Spread Mashed Potatoes evenly on bottom of casserole dish.
  3. Layer Sour Cream evenly over the top of the mashed potatoes.
  4. Saute Onions and Pepper in the butter until soft and slightly carmelized.
  5. Layer your onions and peppers over the sour cream, evenly.
  6. Season now with a bit of salt and pepper.Season to your liking, but remember you can always add seasoning but not take it back.
  7. Next layer with 3/4 cup of the grated Helva Good! Special Reserve Extra Sharp White Cheddar Cheese.
  8. Layer the sliced potatoes over the cheese until top is completely covered in sliced potatoes.
  9. Now top with the remaining grated cheeses. There will be 3/4 cup of the Heluva Good! Special Reserve Extra Sharp White Cheddar Cheese and 1/2 cup of the Heluva Good! Colby-Jack.
  10. Bake covered with foil for 25 to 30 minutes in a 350 degree oven. Then remove foil and bake for another 20 minutes.
  11. Pull Cheesey Potato Casserole from the oven and immediately top with crumbled bacon. Serve and enjoy!
