My Savvy Recipe ~ Southern Pimento Cheese, Bacon & Tomato Crustini’s (DELICIOUS!)

My Hands Down Absolute Favorite Treat! DELICIOUS!

INGREDIENTS:

1 8 ounce block sharp white cheddar cheese, shredded (cracker barrel brand recommended)

1 8 ounce block yellow sharp cheddar cheese, shredded (cracker barrel brand recommended)

7 ounces chopped pimentos, drained well

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper

3/4 cup mayonnaise (Hellman’s is preferred)

2 French Baguettes, good variety for exceptional taste and texture ( I like Panera Breads or Atlanta Bread Company’s baguettes)

remember: bread is key here…… good bread stands apart from all others and the taste is unmistakeable!!!!

1 package bacon, cooked and crumbled

2 roma tomatoes, chopped (for garnish)

DIRECTIONS :

Heat oven to 400 Degrees

Mix both cheeses, mayo, black pepper, garlic powder, cayenne pepper, and pimentos in a mixer to thoroughly incorporate.

Then put into container, sealed tightly and put into fridge for 2 hours at least, so all of the flavors can combine.

Once cheese has had a chance to sit in the refrigerator for at least 2 hours, Cut baguettes thinly and on a biased (angled).

Toast baguette slices on EACH side for 3 or 4 minutes, or until desired crunchiness.

Top each slice with Pimento Cheese mixture and sprinkle with bacon crumbles.

Put back into oven for 3 or 4 more minutes, and then top with diced tomatoes.

Serve and Enjoy!!!

This is also great as a grilled cheese or on top of a burger as well! DELICIOUS!

    I LOVE crostini! They tend to look so fancy, at tapas bars and such. But in reality, they can be so easy to make! (I’ll sometimes make them with just olive oil, salt and pepper, and maybe some mozzarella and fresh basil.)
    Once again, you’ve hit a home run with this recipe! It might have a little too much of a “kick” for me, with the cayenne and all, but that’s just my taste– I prefer milder foods. And, I’m sure that while preparing the crostini this could be adjusted a little. Regardless, this recipe as-is looks like a definite crowd-pleaser!

    This sounds and looks great and I’d just sub some Greek yogurt for the mayo, since I’m not a fan, and some fake bacon, lol. They have some good substitutes out there really. I love the pimentos though.

    I have never had this, but am more than willing to make and try it!! This really does look “deliciously savvy!” I pinned this. I might leave out the cayenne pepper. You are right about using Hellman’s. It is the only mayonnaise we prefer also.

    These Look Absolutely Delicious, Thanks For Sharing! I Don’t Think There is a Kind of Potato that I Don’t Like, Whether it’s Fried, Mashed, Baked, or Like These! The Only Part I Would Have to Leave Out is the Bacon b/c I Don’t Eat Pork but the Tomato is An Amazing Change from the Plain Old Traditional Ones So I Know I Would Like that!
