I have a fabulous recipe to share which is a perfect for National Waffle Day (August 24th!).  This is a fabulous and delicious recipe to use to try something fresh and new for National Waffle Day! Instructions
  1. For Batter:
  2. In a large mixing bowl, mix flour, sugar, baking soda, baking powder and salt.
  3. In separate large bowl, whisk eggs, ricotta cheese, buttermilk, whole milk and butter and lemon juice together.
  4. Mix in lemon zest to the wet mixture.
  5. Pour wet mixture into the dry mixture and stir until smooth.
  6. Cook according to waffle iron instructions.
  7. For mascarpone mixture:
  8. In a small bowl, blend lemon curd into mascarpone.
  9. Place cooked waffle on plate and top with mascarpone and blueberries.
  10. Add powdered sugar if desired.

    I have never made a waffle before but these looks so good and sound simple to make. Have been thinking about getting a waffle machine because you can use them for so many other things.
